Probably for the same reason that anime characters tend to have unusual hair colors (since I haven't seen a lot of real-life humans who naturally have blue hair).
There are other people who are far better-equipped at explaining the evolution of anime art styles than I am, though.
I think the hair colors are supposed to represent their personalities (if you are red, you have determination/you get angry easily, for example).
But everyone having messy hair is really weird. What does it represent? It doesn't represent anything if everyone has it.

The messy hair is probably an expression of cartoonishness in anime. Like it makes things seem like more of a cartoon.

I watch anime all the time. Currently watching Made in Abyss which is quite intriguing I reckon. I don't understand people who just rule it out under a sweeping generalisation of "it's anime, it's bad". It's just stories. I get that a lot of western people are used to different art styles but if you can't get over spiky hair and no noses then you're gonna miss out on some great stories and that's a shame. There's plenty of s*** anime out there but it doesn't take much research to find the good ones.

Dragonball Super I'm starting to enjoy more and more. Also a friend at work suggested Inazuma Eleven... has anyone seen this show? What do they think of it?

Just finished Magic Kaito 1412. I wouldn't say it's great but it had a lot of interesting ideas and was a fun enough watch. For the past few anime season I've been watching a good amount of airing seasons, there's lots of great stuff coming out these days.
