For the checkerboard cookies I used this recipe:

For the rest, I used this recipe (without doing the sandwich thing):

As it turns out, there are also real Yoshi's Cookie recipes, that this person translated from Japanese.  I did not try them:

I used raspberry, apricot, and mint jams that I found at the store (mint is pretty green but a bit weird for flavor).  I added the jam to the cookies before baking, and afterward sprinkled some granulated sugar to help firm them up a bit more.

To get color on the ring and Yoshi cookies, I brushed them with an egg yolk wash before baking, and sprinkled the rings with raw sugar crystals.

I designed and built the cookie cutters to make the shapes

The other 4 will be up soon.  I will also be following up with a full instructional blog entry for making cookie cutters.  I'm teaching a workshop on them in less than 4 weeks at MAGFest.

I wonder if anyone wants to solve the board.  I assume it's probably solvable especially with the wildcards mixed in.
