I'd say Arcade DX, since I've found the arcade ones to be more creative and unique than the other Mario Karts. This is probably due to it being developed by Namco, though.
Arcade DX has more items than any of the maingame Mario Karts, and also has karts that aren't in the maingame ones either. Being able to take a picture and represent yourself with a filtered photo is also pretty neat.
The game also features extra skins for the characters, which Namco actually just made skin swaps and not completely seperate characters. A few of these skins are actually pretty neat, like Dry Bowser, Ice Luigi, and Tanooki Mario. Metal Mario is still his own character, but I'm okay with that.
Plus, this game also has the greatest Kart in the entire series:
