Bait: Ballpark franks
I didn't get a photo of the actual feast, since they got eaten too fast, however I do have a couple recipes to share.
Boil recipe:
2 tbsp paprika
2 tbsp garlic powder
2 tbsp onion powder
2 cups salt
2 tbsp dried oregano
1 tbsp dried thyme
1 tsp cayenne pepper (omit entirely if you want zero heat)
boil live crayfish at a hard rolling boil for 10 minutes, then cut heat and let soak for 30 minutes to get the flavorings into the meat.
I cooked these in an old bayou classic turkey fryer.
butter sauce:
2 sticks butter
4 cloves garlic (minced)
1 tbsp lemon juice
1/2 tsp salt (omit if using salted butter, or adjust to taste)
1 tbsp parsley (optional, for color)
Instructions: Melt the butter in a saucepan over low heat. Add the garlic and simmer gently until fragrant. Do not allow the garlic to brown. Stir in the lemon juice and salt right before serving.
