NOTE: I've never played a Mario Kart game at all.
List of projects I eventually plan to finish after the indefinite hiatus is over, assuming I don't abruptly cancel them:
[+]Spoiler
Mario's Rather Unusual Trilogy (Mario's slightly unusual Boss Rush (Completed), Mario vs. Some Unusual Foes (In development), Mario's VERY Unusual Final Frontier (In development))
Sonic's Foray into Random/Unusual Zones (spin-off of Unusual Trilogy, in development)
Angry Birds Slingshot Frenzy (In development)
Super Mario Flashback: Really Good Edition (In development)
Super Hilda DX (In only conceptual phase)

Yes, I am aware that I have about 6 or so fangame projects currently in development at the same time. And yes, I am also aware that all of this is very ambitious.
+ List of projects I'm helping out with in some small capacity during my hiatus:

I'd say Mario Kart 8, especially when it comes to single player as the CPU is much more realistic than the other games. I also like Double Dash for its unique two person karts and character specific items, but the extremely rubber banded AI makes single player modes a nightmare.

I loved Double Dash, great memories playing that game. I love Double Dash's uniqueness and willingness to be different. Double Dash is great, it'll make you happy and want to play with it more. Lots of fun to have with friends when Double Dash is around, he's a great guy.

Eer, I mean Double Dash is a great game.

It's definitely not 64, that one is overrated as hell. Buggy, floaty mess of a game.

Wii is far from the best, it's Funky Kong or Loose. DS while fun is also snake or loose. The arcade ones tend to be super balanced and fair, and also you can race as Pac-Man.

I've played MK Super Circuit, DS, and 7 in the past, but the best Mario Kart game I played was Mario Kart 8 Deluxe. ON THE SWITCH. First off, it's a portable version of Mario Kart 8 (because of the handheld Switch mode). Second, there's a bunch of kart customizations. Third, the roster is very big, but I don't like the babies and metals. Fourth, I can play as an INKLING! WOOMY! Fifth, all of the downloadable content from the Wii U version is absolutely free (unlockable from the start. Even some kart parts like the Mercedes body can be unlocked by coin collecting.) Sixth, 200CC. I ABSOLUTELY LOVE 200CC. I adapted to faster speeds, and it's more challenging and full of action. Lastly, I just love it.

Edit: My eight reason why I love MK8 DX is that Battle Mode is back. My favorite gamemode was Renegade Roundup - imagine a game of Cops and Robbers but in the Mushroom Kingdom and on wheels. Rescuing my imprisoned friends and patrolling for opponents is really fun - especially when items ramp up the action.

I've played all but 8 deluxe and the arcade ones. Double Dash has great music and tracks, but the AI is incredibly frustrating. The cars in Ds feel slow and empty, but the mission mode is fun. 7 just doesn't have the same feeling as the other games, but that's probably because I always use first-person mode. But I'd have to go with 8 as my favorite. While the anti-gravity sections feel like ant-gravity sections, the music is incredible, the driving mechanics work great (except for bikes, which I always use in Wii), and superb atmosphere, it's a shame that it randomly stopped working one day.

I'd say Arcade DX, since I've found the arcade ones to be more creative and unique than the other Mario Karts. This is probably due to it being developed by Namco, though.
Arcade DX has more items than any of the maingame Mario Karts, and also has karts that aren't in the maingame ones either. Being able to take a picture and represent yourself with a filtered photo is also pretty neat.
The game also features extra skins for the characters, which Namco actually just made skin swaps and not completely seperate characters. A few of these skins are actually pretty neat, like Dry Bowser, Ice Luigi, and Tanooki Mario. Metal Mario is still his own character, but I'm okay with that.

Plus, this game also has the greatest Kart in the entire series:

I honestly think 8 (and by extension, 8 Deluxe) has the control scheme down to near-perfection. It also still looks really good after all the years it's already been out, unlike some of the other games like Wii. I at first had a hard time choosing between 8 and 8 Deluxe, but because I spent more time with the latter, that one gets my vote for the poll.

The amount and variety of content in 8 Deluxe is insane and the battle mode is passable compared to it's Wii U counterpart's terrible battle mode.

I vote 8 Deluxe.

Mario Kart 8 Deluxe, without a doubt. That game has the right balance of characters, karts, and courses, and that's not even mentioning the improved Battle Mode and exhilarating insanity. Although I don't play it too often, the times I do are some of the most fun of all.
