Hit the jackpot near my house!

Bait: Ballpark franks

I didn't get a photo of the actual feast, since they got eaten too fast, however I do have a couple recipes to share.

Boil recipe:
2 tbsp paprika
2 tbsp garlic powder
2 tbsp onion powder
2 cups salt
2 tbsp dried oregano
1 tbsp dried thyme
1 tsp cayenne pepper (omit entirely if you want zero heat)

boil live crayfish at a hard rolling boil for 10 minutes, then cut heat and let soak for 30 minutes to get the flavorings into the meat.
I cooked these in an old bayou classic turkey fryer.

butter sauce:
2 sticks butter
4 cloves garlic (minced)
1 tbsp lemon juice
1/2 tsp salt (omit if using salted butter, or adjust to taste)
1 tbsp parsley (optional, for color)

Instructions: Melt the butter in a saucepan over low heat. Add the garlic and simmer gently until fragrant. Do not allow the garlic to brown. Stir in the lemon juice and salt right before serving.

I suspect this recipe would work nicely with shrimp, too.

Actually, It might work really well with shrimp. they're pretty similar, and the recipes are pretty close. Same with Crab, or Lobster.

I love seafood, way too much, so this is right up my alley. Boils are wonderful! Any other way you've prepared this before?

Honestly, this is the first time I've tried cooking them up myself, but the feast was a rousing success. I do plan on changing things up, like adding corn, sausage, and potatoes to the boil (like most recipes suggest), and maybe punching up the cayenne pepper a bit (to about 4 tbsp). I do hear that the tail and claw meat freeze dries really well, and can be used in ramen. guests also suggested trying my dad's beer batter on it.

These aren't things I've actually tried, I'm afraid, but, things I might do soonish.
